Applications and Uses of Calcium Propionate

Applications:

It is used as a preservative for bread, pastries, and cheese, as well as an anti-mold agent for feed. As a food preservative, calcium propionate is mainly used in bread because sodium propionate raises the pH value of the bread and delays the fermentation of the dough. Sodium propionate is more commonly used in pastries because the leavening of pastries uses synthetic leavening agents, and there is no problem of yeast development caused by the rise in pH value. When used as a feed preservative, sodium propionate is more effective than calcium propionate. However, calcium propionate is more stable than sodium propionate. Besides being used in bread, pastries, and cheese, propionates can also be used to prevent mold in soy sauce and inhibit re-fermentation. In medicine, propionates can be made into powders, solutions, and ointments to treat diseases caused by skin parasitic molds. The ointment (solution) contains 12.3% sodium propionate, and the powder contains 15% calcium propionate.

Calcium propionate has a broad antibacterial effect on molds, yeasts, and bacteria.

1. Calcium propionate can be used as an anti-mold agent for food and feed and as a preservative for bread and pastries. It is easy to mix evenly with flour. While serving as a preservative, it can also provide the essential calcium for the human body, playing a role in fortifying food.

2. Calcium propionate has an inhibitory effect on molds and aerobic spore-forming bacilli that can cause sticky substances in bread, but it has no inhibitory effect on yeasts.

3. It is effective against molds, aerobic spore-forming bacteria, Gram-negative bacteria, and aflatoxin in substances containing starch, protein, and fat, possessing unique anti-mold and preservative properties.

4. It is a new, safe, efficient, and broad-spectrum anti-mold agent for food and feed in various aspects such as food and brewing, feed, and traditional Chinese medicine preparations.

5. As a feed additive, calcium propionate can effectively inhibit feed mold and extend the feed preservation period. If combined with other inorganic salts, it can also improve the appetite of livestock and increase the milk production of dairy cows. Calcium propionate has low volatility, high temperature resistance, and good adaptability to animals, making it suitable for various feeds.
