Calcium Propionate Dosage in Different Baked Goods

· Bread: In bread making, the usage amount of calcium propionate is generally 0.2 – 0.3% (based on the weight of flour). For example, if 1000 grams of flour is used to make bread, the addition amount of calcium propionate is usually 2 – 3 grams. Such an addition amount can effectively inhibit the growth of molds and yeasts during the storage of bread, extend the shelf life of bread, and at the same time, it will not have obvious adverse effects on yeast fermentation and the flavor of bread.

· Pastries: For pastry products, the dosage of calcium propionate is usually a little lower. Generally, it is 0.1 – 0.2% (based on the weight of the main raw materials such as flour). This is because the composition and production process of pastries are different from those of bread. Some pastries are more sensitive to additives, and their storage conditions and shelf life requirements may also be different from those of bread. For example, some puff pastries rich in oil and sugar have a certain inhibitory effect on the growth of microorganisms due to their high-sugar and high-oil environment, so the dosage of calcium propionate can be relatively less.

Limit Specified by Regulations

In many countries and regions, the use of food additives is strictly regulated by laws and regulations. There are also clear limit regulations for the use of calcium propionate in baked goods. For example, in China, according to the “Standard for the Use of Food Additives” GB 2760 – 2014 (this standard will be updated according to the actual situation), the maximum usage amount of calcium propionate in baked goods such as bread is 2.5g/kg (calculated as propionic acid). This regulation is to ensure that while exerting the antiseptic effect, the health and safety of consumers are guaranteed and the potential health risks caused by excessive use are prevented.

Factors Affecting the Usage Dosage

· Expected Shelf Life: If you want the baked goods to have a longer shelf life, under the premise of complying with the regulations, the usage amount of calcium propionate can be appropriately increased. However, it must be operated carefully to avoid exceeding the specified limit. For example, for some baked products that need to be transported for a long time or stored for a long time, the addition amount close to the upper limit of the regulations may be selected.

· Raw Material Characteristics: If the baking raw materials themselves contain more natural antibacterial components, such as some dried fruits with high concentrations of organic acids, the dosage of calcium propionate can be appropriately reduced. In addition, the freshness of the raw materials will also affect the dosage. Fresh raw materials have a relatively low microbial content and may require less calcium propionate to achieve the antiseptic purpose.

· Packaging and Storage Conditions: If the baked goods adopt good packaging materials (such as vacuum packaging, inert gas-filled packaging, etc.) and suitable storage conditions (such as low temperature and dry environment), the dosage of calcium propionate can be appropriately reduced. Because these measures can themselves inhibit the growth of microorganisms to a certain extent and play a synergistic antiseptic role with calcium propionate.
